Sweet Sunday: Oreo Stuffed Brownies

For those of you who know me well....I have a crazy sweet tooth. I could live off of sweets. I used to never be this way, but when I got pregnant with little E all of that changed. I crave cookies and dream of donuts. Oh its pretty awful :)...well maybe only for my waistline.
I cannot believe it is almost August. This means that the birthday festivities are about to begin! Some of my most favorite people have August birthdays...including myself. So Happy Birthday to all my friends, family, and everyone else who are awesome August babies. If you have time treat your favorite person to these delicious brownies....even if it isn't their birthday they will feel special after eating these.

 Oreo Stuffed Brownies 
1 box dark chocolate brownie mix
1 package Oreos (you will probably only use about 10-12)
Sprinkles (if desired)


Prepare brownies according to package. Pour half of the mix into your brownie pan. Layer Oreos on top of batter. Top with the rest of the batter. Bake and Enjoy! 



 Delicious!


I think next time I will use double stuffed Oreos.

Popcorn Almond Fudge

As I mentioned in the previous post I had a packed weekend. But this did not stop me from making a sweet treat for myself. I am a huge fan of the sweet and salty combination and I am that girl that eats potato chips in her chocolate ice cream. I am also a big fan of chocolate drizzle popcorn. So what would be the next best thing....popcorn folded into fudge obviously. It was like a dream come true in one little square. I think that next time I might even leave the almonds out because I felt like they were somewhat pointless. If you like sweet and salty I recommend this recipe. This is the comfort food that I crave.

After melting chocolate and adding the condensed milk fold in the sliced almonds


Next comes the freshly popped popcorn


Pour into a pan and let it set up in the fridge


Cut into squares


Enjoy!!!

Popcorn Almond Fudge
1 mini pack popped popcorn
1 (18 oz.) package milk chocolate chips
1 (14 oz.) can sweetened condensed milk
2 tablespoon butter or margarine
1/2 cup toasted slivered almonds
1 teaspoon vanilla

Line 9" x 13” pan with foil; set aside.Melt chips, condensed milk and butter in large saucepan or in the microwave, stirring until smooth; remove from heat. Stir in popcorn, nuts and vanilla.Spread mixture evenly in prepared pan. Chill 2 hours or until firm. Remove from pan and cut into squares. EAT!

Death By Chocolate

I have always known that my eating habits are very much affected by my mood. And because of this I have self diagnosed myself as an emotional eater. I get sad, I eat. I get happy, I eat. I get nervous, I eat. Well this really might just mean that I like to eat. Most recently I have been wanting chocolate. I love chocolate! And any recipe that claims to kill me with chocolate has to be tried...and eaten. I found this recipe on All Recipes. I changed the original recipe to fit my own taste preferences. I replaced the german chocolate cake for a butter recipe chocolate cake. I also opted to use extra creamy whipped topping and instant coffee. You  could easily make this a minty death by chocolate by substituting toffee for Andes mints or replace the coffee for caramel. Overall this is awesome and I will make it again for sure! It made my tummy happy and I am sure it will make yours happy too!

Death By Chocolate

1 (18.25 ounce) package chocolate cake mix
1 (3.9 ounce) package instant chocolate pudding mix
1 2/3 cups milk
3/4 cup strong brewed coffee ( I used instant coffee)
1 (12 ounce) container creamy whipped topping, thawed
6 (1.4 ounce) bars chocolate covered toffee bars (Heath), frozen and crushed

In any size cake pan, bake cake according to package directions. Cool and crumble. Make pudding, according to package directions, with milk.
In a large trifle or other glass serving bowl, place half of the crumbled cake. Pour half of the coffee over the cake, and spread half of the pudding over that. Top with half of the whipped topping, sprinkled with half the crumbled candy bars. Repeat layers in the same order. Refrigerate until serving. Enjoy!!

Not Your Average Tart

You know how you wake up some mornings and you seem destined to have a bad day? Like when you start your car and as you pull out of your driveway you have 35 miles until empty, which should be plenty of gas to get you to the gas station or maybe even work. But when you get to the end of the street and you look down you now only have 8 miles to empty! Yeah that happened to me. And if that's not bad enough when I finally did make it to the gas station (barely) my debit card refused to work. Oh not a problem, I thought, I will just grab the credit card....oh wait Joel (my husband) still has it. Well I never carry cash and the sign in the window clearly stated "NO CHECKS". So at this point I had 2 miles until empty and I was actually considering walking the twenty miles to work, but something random and ironic happened that changed my whole day. Running On Empty played on the radio. Not only did this song sum up my morning and give me something to sing along to, but it also gave me just enough motivation to think I could make the trip back home to get the credit card and attempt the drive back to the gas station. I don't know how, but a miracle occured and I made it. Thankfully the rest of the day wasn't so bad either.... so here is to you Jackson Browne! Too bad that song didn't fix my debit card when it didn't work at the Mexican restaurant later that day. Sheesh.
I am thinking maybe I would have felt better if I started my day off with one of these chocolaty squares of awesomeness. All I have to say is I will never look at a boxed toaster pastry the same way again. I had some leftover dough from my Peach Tart and added melted chocolate. You could always make your own pie dough and fill with fruit preserves (or even better Nutella) but I just used what was handy. And in this case handy was also tasty.

Homemade Pop-Tarts

  • Pie Crust (refrigerated or homemade)
  • Jam, Preserves, Melted Chocolate Chips, Nutella (its your choice!)
  • 1 egg mixed with 1 tablespoon of water for egg wash

Preheat the oven to 425 degrees

Unroll one of the pie crusts and square the edges. Cut into rectangles. Place 1 tsp of filling in the center of a rectangle and top with another piece of crust. Make sure to leave space around the edges.
Crimp all four edges using fork. Repeat until all of the pie crust is used. (you can shape the trimmings into a square so you wont waste any dough) Brush egg wash over top and edges of tart
Bake the pop-tarts for about 8-10 minutes or until slightly brown. Once cool top with chocolate or glaze.
